One of my favourite dishes in Greece is courgette fritters so how good it is to be able to recreate this tasty meal in Lincolnshire from home grown produce complete with lettuce, radish and spring onion. Feta Cheese and Olives from ALDI.

I love both courgette fritters and courgette flower fritters, the latter are of course very seasonal.

Any chance of sharing the recipe? I love courgettes but have utterly failed to make this work, and they usually end up really soggy.

Grate the courgette and mix with crumbled Feta cheese, a little Parmesan and some chilli. Cover in an egg mixture and gently fry in olive oil. Season to taste.

These look very yummy! We grew zucchini (courgettes) in Canada and always had a good crop. Made many things with them including chocolate zucchini cake!
